Research Areas

Research areas include 1) enhancement of muscle protein functionality through ingredient and processing protocol manipulation, 2) pre- and postharvest factors affecting quality of rainbow trout fillets, and 3) preharvest ecology of Salmonella and Campylobacter in turkey production.

Critical Issues

A general lack of activity at the "grass roots" level in aquaculture production.
