1) Effect of dietary vit. E on post harvest quality of trout muscle, a part of Aquaculture Food and Marketing Development Project

Future Research

1) Development of value-added products based on pH-driven recovery applied to trout processing waste management
2) Omega-3 fortified low fat trout as functional food, a part of Aquaculture Food and Marketing Development Project
3) Development of value-added products from Krill based on pH-driven processing
4) Electron beam – the ultimate solution for food safety

Research interest

My research focuses on post-harvest food safety and quality. In particular, application of a non-thermal ionizing energy, electron beam, to inactivate human pathogens as well as electrostatic coating of foods with antimicrobials to prevent cross-contamination. In addition, e-beam effects on food proteins and lipids are of my interest.

I am also interested in processing waste management and usage of under-utilized aquatic resources and for value-added human food.

The top two critical issues, in my opinion, facing aquaculture development in WV and the region

1) domestic product competitiveness with imports,
2) better utilization of aquatic resources.
