Investigators in this objective are focusing on product quality. The effect of water quality and stress on the consistency and quality of fresh trout fillets and value-added smoked trout products will be examined. The effect of culture conditions and postharvest handling and antioxident feeding on product quality will be studied. Investigators will collaborate with Joseph Regenstein of Cornell University and Joseph Hankins of The Conservation Fund's Freshwater Institute.
